Miso Soup with Vegetables

You can make this healthy miso soup easily at home. I used the "Hondashi" (Bonito Soup Stock) package in this recipe.

★ The amount of ingredients and heating time are measured for 1 ~ 2 people.

★ cooking times may vary depending on your microwave's wattage, brand and size.

    1. Cut all the vegetables.
    2. Pour water into the Microwave Donabe. 
    3. Add Hondashi, Miso and stir gently.
    4. Add cut potatoes, carrots, and onions into the pot.
    5. put the lid on and cook in the microwave for 5~8 min. ( add a few minutes if all the vegetables are too hard)
    6. Put tofu in a soup bowl and pour the soup.
    7. Add the chopped green onions right before serving.

*1...Fill the water up to the 2nd line of the inner line of the Microwave Donabe.

*2...You can purchase Hondashi at most of the Asian Markets, or from Amazon.

*3...Some of the Miso Pastes are already mixed with Dashi flavor. If so, please adjust Hondashi and Miso Paste amount. (little less)
