Japanese Hamburg Steak

I changed up the original recipe by mixing tofu. Healthy, meaty and juicy. My recommendation is to serve this dish with some grated daikon radish.

★ cooking times may vary depending on your microwave's wattage, brand and size.


    1. Mince the onion.
    2. Put chopped onions, ground beef, tofu, panko bread crumbs, grated garlic, nutmeg, salt and pepper in to a bowl. 
    3. Mix all the ingredients well.
    4. Mix by hand and knead the mixture. (until the mixture become sticky)
    5. Divide the mixture in half. 
    6. Scoop out one portion, and make it into a ball shape. 
    7. Toss the meat back and forth between  your hands repeatedly until the meat mixture becomes tight patty. (5~6 times) *** 1
    8. Form the patty into an oval shape. 
    9. Repeat step 6~8 with the other meat.
    10. Place the 2 patties gently in the Donabe, and make a small indention in the center of each patty with your finger. (small indention, not making a hall) ***2
    11. Put the lid on and cook for 4 min.
    12. Place some grated daikon radish on top of the cooked patties with your choice of sauce. ***3
    ***1 This process releases any air inside the patties. Without this process, the hamburg steaks will crack during cooking. ***2 You need to make a small indention, because the center of the patties will rise while cooking. ***3 My recommendation of sauce for the grated radish is Kikkoman brand Ponzu sauce. It's a citrus seasoned dressing and goes perfectly with the daikon radish. Or just a plain soy sauce is good too. If you are not a huge fan of Daikon radish, you can simply pour the Ponzu sauce directly on the hamburg steaks.
